I think you are talking about a "MIDI sequencer" with a tracker-like
interface.

Personally, I have never liked, or learned to use, a tracker-type
interface, so I cannot recommend any from personal experience, but there are
such programs available. A search on Google Linux should find a heap of
them: http://www.google.com/linux
