The GUS2 set that I bundled with timidity is a compromise, not the
worst-sounding set but not the biggest. When I get time I will sort out the
best patches you asked for.

I don't know anything about sf2 sound banks.

I guess that depends on the playback software. In Win3.1, I use Music
Sculptor and that gives me complete control over which instrument plays on
each track.

I can't help you there. Every attempt I have made to edit MIDI files by
hand (i.e. without proper MIDI sequencer software) has ended in the MIDI
files becoming unplayable. Which is why I advise against it.
