So, I've become confused on the 'freedom' USDA inspection gives me to sell my own meat. If I have my birds slaughtered at a USDA plant, then do I have the right to put them in the freezer and sell them two months from now? Do I have the right to take them to the farmers market and sell them from a cooler? How much 'freedom' do I have to market the meat that was raised here? AND, doesn't my ability to store meat realiably become an issue to health departments?

In this state, you must either sell direct off the farm (customer must
come to your farm to pick up the chicken(s) that you have slaughtered
and processed) or the meat must come from a USDA approved facility.

We are not allowed to bypass the USDA and still sell to consumers except
for a limited number of self-processed birds off the farm. In VA I
think the "limit" is 2000, it is less here but I don't know how many.
