The USDA rules concerning slaughtering ALWAYS take precedence. Local
health codes vary widely, but the laws governing the resale of meat are
federal.

It was the Feds who tried to shut Joel Salatin down. And came darn
close to it, too.

State and county regulations concerning on-farm sales, and health
department regulations about storing and packaging and handling of food
items for retail sales to consumers do vary widely, even within the same
state. But once you move into reselling meat, you are under the USDAs
purview and must conform with ALL the USDA regulations.
