Liz,
The research I have done with small packing houses in my area of Kentucky
indicates that they do cattle, hogs, an occasional sheep and maybe deer (I
assume they would also do goats). They say that they are not set up to do
chickens or rabbits.
It may be that it is a regional thing and that poultry is more a traditional
crop in your area and the problem we are experiencing is localized.
