stuff that I had some recollection of but couldn't remember detail.

The problem with fixed sized paddocks is that grass growth rates and stock changes make them less useful than long narrow fields with high tensile smooth wire perimeters. These can be sized to fit your immediate needs by breaking them up with polywire and step in posts.

Like Mark and others have said resting the paddocks properly seems to be the
real key after proper stocking.
