Don't look for logic or consistency in the English language,
or you will drive yourself batty. :)

But in this case, tomatoes probably follows a rule - we've
had this word a long time, after all. But tomatillo is
probably a recent import from Spanish and not 'Anglicized'
enough for the plural to have the 'e'.
