All the alliums can be eaten as scallions, leeks included. Spring planted
leeks will be fully mature by the early fall but being biennials, they will
wait
around in that state until the next spring. You use them anytime before they
go into their second year's growth ... at which time they sac everything to
put up the seed stalk.
So you plant the seed now and eat them at any stage until this time next year.
