I've never counted jars, just cases. I like to keep the boxes the jars come in and then put them pack in for stacking. Plus I can nicely label the ends of the boxes (use labels printed from the computer with the dates and what is in them [type of tomato in the salsa, etc.] so we know what works best the next time around).

Guess I should count them.

I know that I am one of the ones that mentioned that my mom put up over 1500 quarts of canned goods every year, not including dehydrated foods (she had two running almost constantly, as I recall, one of which my Dad had made for her and had 23 3' by 3' trays. It was taller than I am). However, just so you know, I am the oldest of 15 kids. While we did not always consume a season of the preserved food in a year, we put a real good notch in it. Now, of course, she does not do as much, and is constantly giving any of her kids who want, jars of food. The last ones we got were salsa and pizza sauce from 1988. Salsa is still good, pizza sauce not so much ;-) Of course, I re-use the jars in my own canning, and the tradition continues...

Of course, I come absolutely nowhere close the the sheer volume of what she did. I look back, and am amazed, impressed, and awed.
