It's snowing today in W. Washington. Nothing better than baking goodies while
listening to Christmas music and watching snow floating by the windows. I'd
love to read about what your favorite goodies are that you're baking this
year.

Christmas Casserole Cookies I
INGREDIENTS (Nutrition)
* 2 eggs
* 1 1/4 cups white sugar
* 1 cup coarsely chopped walnuts
* 1 cup chopped dates
* 1 teaspoon vanilla extract
* 1 cup flaked coconut
* 1/4 teaspoon almond extract ( I used vanilla)
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a mixing bowl, beat eggs with an electric mixer. Add 1 cup sugar and
beat well. Blend in nuts, dates, vanilla, coconut and almond extract.
Transfer mixture to an ungreased 2 quart casserole.
3. Bake in a preheated 350 degrees F (175 degrees C) oven for 30 minutes.
Remove the mixture from the oven while still hot and beat well with a wooden
spoon. Cool until the mixture can be handled then form into small balls and
roll in the 1/4 cup remaining sugar.
Notes:
You can use any fruits, nuts just figure 3 Cups total.
Think marble size.
They will be sticky until you roll them in sugar.

Here's the easiest and really creamy and good fudge recipe that I've ever
made. It was on the back of the McCormick Orange Extract box:
Easy Orange-Chocolate Fudge:
Ingredients:
1 lb (3 3/4 cups) Confectioners' sugar
1/2 C unsweetened cocoa
1/2 C butter
1/4 C milk
1t orange extract
1t vanilla extract
1 C chopped nuts
Directions:
1. Line 8x8 pan with wax paper. Mix sugar and cocoa together.
2. In saucepan, heat butter and milk until butter melts. Remove from heat.
Stir in the extracts, sugar mixture and nuts. Pour into pan. Chill one hour
and enjoy :-) I can think of lots of variations.
