I very much like butternut wood. Native Missourians and I also prefer its sweeter nut. They call it white walnut. In southern Missouri and I believe a wider area, butternuts are at great danger due to a canker. The beaver-flooded pond killed my last large one. It is dead standing and I will work it up this next year. I wrote recently how good the wood is for cooking and serving spoons and pan scrapes. It carves beautifully.
