I think commercial nurseries always June bud stone fruit.  It's probably easier and more reliable overall.  That's the real reason all the literature acts like that's the way it's done, period.  Me, I try to do all my grafting before garden season starts.   By the time it's really wise to graft walnuts, much less do June budding, I'm too busy.  I do fine barkgrafting plums, haven't tried it with peaches.    Donna
