I have been messing with the wine thing too. Mostly it has been as a
byproduct of canning this year. You see, I peel and cut the fruit or just
cut, add some honey and some lemon juice and stir a bit. I add cut fruit
till the big bowl is full. The honey causes the juice to draw. I use the
honey juice to fill the jars but there is usually left over juice. I put
that in the gallon jug with the yeast. I only filled it about half way but
there was so much particulate in the juice that it foamed over. Trying to
get that wine to clear has been a real challenge. Tastes nice though.

Yes, we've made blueberry wine with very few changes. The main problem is
that we put it straight into the glass jug and the fermentation was so rapid
that it popped the bubbler on top and decorated our living room ceiling with
some interesting purple spots. I guess most anything would work as long as
you leave plenty of room in the jug for rapid fermentation, or do that part
in some kind of open container and siphon it into the jug later. Works will
with grapes. Muscadine grapes seem to change flavor and not so nice as a
wine after the steam juicer. Same thing happened with mulberries.. Hector
