If it gets dry White Tail will eat just about anything.  There is little they will not sample or chew down if it provides moisture.

The best way to deal with dear is to either fence or hunt.  Both work well and should be used together.  The fence is part of the infrastructure in a world where humans have destroyed the predators of the deer.  

If you do not sell enough to produce to warrant such an expenditure, then decrease the size of the garden.  Fencing you can depreciate over several years so its an investment that helps on several levels.
