They will do just as good a job, it's just that you have to maintain
the pressure at a certain level for the entire time you are processing
the food. It takes lots of fire at the beginning and then as the food
in the jars heats up, it takes less heat to maintain the same level of
pressure. Easier to do with electric and maybe easier with gas heat.
