European olives are not cold hardy enough for your zone 7. If you lived in zone 9 or possibly 8b you would have a chance of growing them.
I think it is better to state the facts than have you learn the "hard way."

I was curious if anyone here in the south-west has ever attempted Olive
growing? I'm not talking about those pin-head sized fruits on the
autumn olive but a genuine, big fat delicious Olive. I have been
thinking about adding a small olive grove to my orchard, but I'm not sure.

I live in Arkansas, zone 7a-7b right on the line pretty much.
