For years we used  a full size van with a sliding door on right side, 8 x 10 awning tarp mounted  over side door on a roll tube; outside edge supported by 2 legs/posts balasted with 2 buckets of rocks and bungees.

I like a false floor  to keep tables and first needed stuff handy without unloading
inventory to get at it.
 
We were 2 miles from home so that for strawberry and sweetcorn season a second vehicle
made sense and transferred load into the van after its load was set out for sale. In fall when 50lb potato and squash bags, big pumpkins , straw bales and corn stalk bundles required,  we used a baled hay wagon and left it on site all day, (sometimes just tarped and leaf t as our market at that time was 6 days a week at that site).
 
A young family from the Plain Folk community have my space now and use the same style van;
have not missed a sale day in a year and a half, and I mean all winter here in the middle of Maine.
