Sue,

I feel the same way about things.  I grow 10-11 different varieties, colors, shapes of squash/zucchini. However, I sell the most zucchini I sell is just the plain ol green ones.  However, the other ones gets people to stop at my booth.  I also grow 10 varieties/colors of cherry tomatoes. Most go for the reds or a mixed basket. The colors make them stop.

I also grow 4 colors of potatoes (red, purple, white and yellow). It just gets people to stop and ask.

I probably won't grow to much lettuce. While other grow and sell tons of it, I end up bringing mine home. I am tired of the picking, washing, bagging and throwing away. Instead, next year I am going to grow more Haikuri turnips, Carrots, Sweet Onions, Pink Beauty radishes, Red Ace Beets, and spinach in my tunnels.  Not everyone can do that and have them early.

I love growing baby red russian kale. This is great in salads, or as a
salad, stir fries, and is great on homemade pizza's/ I have a customer that
juices it. It tastes so much better than bigger kale.
I grow a large variety of summer squash, zucchini.
The number of Farmers Markets in Vermont is growing, and to9 survive, I have
to grow different things. I found this last week, my mixed lettuce was a
very poor seller. Everyone has lettuce, even though mine is quite different
with many additives to it, such as mizuna, baby kale, baby swiss chard, and
any other things I have to put into it, with edible flowers in it when I
can.
The round zucchinis are really great an I enjoy the taste much better than
the regular zucchinis, but I grow all of them. My chickens eat the  extra
ones, or they go to the food bank.
