We do scape pesto and a garlic scape white bean dip all the time.  We freeze a lot of pesto (several types) for winter.  The dip rocks and is great when having guests over.  It also helps sell a whole lot of scapes to folks that try it once.  :)

I made garlic scape pesto the other day, and it was very delicious. I didn’t add much olive oil, as I don’t care for much of it, and added lemon juice, almonds, parmesan cheese, garlic scapes, and some parsley. I think that was all. It is very garlicy and great.
