Now, if we could just find a way to display lettuce at market without it wilting so badly! The heat is bad, and the wind even worse!

After years of having my lettuce wilt I started bagging it for sale. I put 1/2 pound of lettuce in a bag (the "5-a-day" produce bags work well) with a label that has my farm name, address and the kind of lettuce that is in the bag. When kept in a bag they do not wilt or dehydrate and any unsold bags can be put back in the cooler and sold again at the next market (they will keep well for up to 10 days this way). I have gone from having 25 to 50% of my lettuce trashed to less than 10% trashed and my customers seem to like the bags. I also bag spinach, kale, chard, arugula and spring mix.

oh and I never have more than 2 bags of any type of lettuce out at a time. Most stay in the cooler with ice packs and towels.
