Shelly,
We had the same problem any place the greens touch the ice, they froze and
got slimy. We keep them in a glass doored cooler (a walk-in is still
a dream for us) in bags, in a plastic bin or waxed produce box, until the
morning of market. Then, we repack the bags into a large "camping" cooler
with frozen 1/2 gallon jugs of ice at each end, with a double layer of
corrugated cardboard (box tops or whatever) between the ice and the
mesclun bags. Works pretty well.
Now, if we could just find a way to display lettuce at market without
it wilting so badly! The heat is bad, and the wind even worse!
