From what you wrote it appears you are doing a
very good job of adding value through branding
to your tomato crop.

Have you tried promoting the restaurant connections
at Farmers Markets? If the restaurants are well known,
I'm sure your customers would be impressed beyond
what they are already. Having a copy of the restaurant
menu that features the "Shale Rock Salad" opened to
it or highlighting that fact in on table literature would be
an additional boost.

Keep up the good marketing.
