Here with everyone talking about garlic harvest, would I be correnct to take
it that in general we mean the mature bulbs?

But garlic is more flexible than that. Before the stalk hardens, the whole
plant is edible just as if it were a 'garlic scallion'.

In Pearl Buck's 'The Good Earth' she writes of the protagonist:

"Now in Wang Lung's country, if a man had a stalk of garlic and a good piece
of wheaten bread to wrap around it, he had a good meal and needed no other
..."

Stalk of garlic?? So I looked into it and sure enough most garlic around the
world is grown as green garlic.

The whole plant can be minced up fine and added to anything you'd add garlic
to. It also freezes or dehydrates well. </HTML>
