In a hermetic container with the oxygen removed... that can be
either by vacuum or by combustion (i.e. burning a candle inside
the closed container). Generally vacuum is better because it
also removes moisture, thereby preventing growth of funguses
some of which might still be able to grow in low oxygen
environments. But the candle in closed container trick is
easy and convenient for containers that need relatively
frequent access.

It isn't difficult to create a sufficient vacuum for these
purposes... a reversed bicycle pump does the trick. Also you
can evacuate regular pickling jars by using a simple evacuation
chamber... that is a larger container with a nipple to hook
up your pump. Put the smaller jar with lid placed loosely in
the larger container, evacuate the container, then break the
outer vacuum---the inner jar will have its lid "slammed down"
by the returning pressure. This type of vacuum should suffice
to preserve most dry perishables for centuries.
