How about just plain old honey instead of maple syrup? And if you want to get real wild and crazy, heat it and add some fruit...blueberries, strawberries, etc. Strawberries and honey go real well together. As a matter of fact, I made strawberry jam with only honey and strawberries a few years ago. Honey has got all kinds of good things in it...much better than anything sugar based. Re:making jam....you'd have to experiment, but you can forego the sugar and just use fruit and some sweetener like concentrated apple juice. A good thing to do is look at your local grocery store to find the product you'd like to duplicate, like all-fruit jam, and just read the ingredient list and start experimenting! Works for all the various salsas, too, just don't can this type of stuff since you can't be sure of the acidity. Any jam, when heated, makes a perfectly good fruit "syrup". Happy experimenting!

I'm trying to eat only organic these days and real maple syrup costs a small fortune.

I remember making syrup out of something called "mapeline" (sp?) - but what is that
stuff? I tried to google, but I keep getting recipes for how to make syrup.

I wonder about alternatives to maple syrup that I might be able to make the same way:
sugar, water and .... flavoring. Vanilla?

Any ideas?
