you have inspired me to experiment!!
i think i'll try mixing some water with organic turbinado or sucanat and cooking it down until it's syrup consistency (simple syrup) and add vanilla when cool. Or maple extract
http://www.icdc.com/~vanilla/Pure%20Maple%20Flavor%20Extract.htm
(That's what all the fake maple syrup makers do- corn syrup w/maple flavoring)

To extend maple syrup I have blended frozen (thawed) strawberries, blueberries, or peaches and added just enough syrup to sweeten. Delish on pancakes and waffles. Could do the same subbing with simple syrup.
Might also try reducing frozen fruit juice concentrate.

Subject: [permaculture] alternatives to maple syrup

I'm trying to eat only organic these days and real maple syrup costs a small fortune.

I remember making syrup out of something called "mapeline" (sp?) - but what is that
stuff? I tried to google, but I keep getting recipes for how to make syrup.

I wonder about alternatives to maple syrup that I might be able to make the same way:
sugar, water and .... flavoring. Vanilla?

Any ideas?
