They won't do heavy damage, if any at all, to persimmons and pawpaws - with respect to browsing, but the ruttting bucks will certainly rub both of those species aggressively during the rut, so I'd recommend installing trunk protection of some sort - tree tubes, a temporary fence, etc.
All the others would be considered fair game for deer food around here.
