Kate, That particular individual probably got burned by some backyard gardener that had a few heads of greens to sell. I will put my hydroponic greens up against anything California can produce in their (many times salmonella ridden) packing houses. My product lasts 10 to 14 days and does not even have to be washed (does not come into any contact with soil, not that I would ever say it does not need to be washed by the consumer). Please take peoples claims like that with a grain of salt, they usually have some axe to grind. It could also be that it is easier for them to get that one big distribution center delivery than getting several local people coming in with great stuff, but taking up all his time (people can be lazy). No one should be growing greens that does not have the necessary, proper refrigeration. Pretty sure that’s the case in some situations, but recently talking with a high-end grocery retailer in our region (Puget Sound), they claimed the reverse is true in the majority of cases. Reasoning they gave was the sophisticated harvest procedure and chill facilities the big California growers use vs the ‘throw it in the re-purposed washing machine, then in a tote in the cooler’ theme used by many small growers. Post harvest procedures are as critical to quality as growing regimen. Locally grown quality should provide a qualititative advantage over west coast product. While they have some advantages, quality shouldn't be one of them. It should be your first negotiating point with chefs. If they can't tell the difference, there is a reason (among many) for that. Bill William H. We have found that the chefs we deal with love a seasonally changing mix of salad. Everything is seasonal salad mixes should be also. As to competing against Cali mass produced. We aren't. *IF* you are supplying a local market with properly cooled and handled mixes and greens your product should CRUSH the mass produced stuff. Our chefs order the trucked stuff on Thursday and toss it on Monday if not used. If they are purchasing from us they can order in smaller quantity at a much higher price because it LASTS seven to fourteen days. So they can order week to week rather than twice a week.
