I always held the same opinion regarding local vs trucked in greens (local is better quality). Pretty sure that’s the case in some situations, but recently talking with a high-end grocery retailer in our region (Puget Sound), they claimed the reverse
is true in the majority of cases. Reasoning they gave was the sophisticated harvest procedure and chill facilities the big California growers use vs the ‘throw it in the re-purposed washing
machine, then in a tote in the cooler’ theme used by many small growers. Post harvest procedures are as critical to quality as growing regimen. On Behalf Of Shoemaker, William H I agree with Richard. Locally grown quality should provide a qualititative advantage over west coast product. While they have some advantages, quality shouldn't be one of them.

We have found that the chefs we deal with love a seasonally changing mix of salad. Everything is seasonal salad mixes should be also. As to competing against Cali mass produced. We aren't. *IF* you are supplying
a local market with properly cooled and handled mixes and greens your product should CRUSH the mass produced stuff. Our chefs order the trucked stuff on Thursday and toss it on Monday if not used. If they are purchasing from us they can order in smaller
