Kris,
I recycle egg cartons, just making sure they are clean.  There are stamps you can get saying to the effect that you are recycling egg cartons, but I stopped doing it because my customers don't seem to really care and they help me recycle by bringing me lots of cartons they get from family and friends.
I did a simple LLC, protects me from any nut jobs wanting to sue, I'm pretty sure my eggs are very safe since we make raw milk shakes with raw eggs, no one sick here in 15 years.
The price of feed is killing me since I only raise about 60 hens and don't have storage for lots of feed (need to look for a small grain storage second hand).  After years of raising chickens for eggs, with all the publicity about free ranged eggs, I finally have way more customers than I can handle.  Too bad some folks offer eggs for $2.50/doz.  I can't come near to breaking if I did that!
I lurk here for the most part too, after some serious financial set backs over the past year, I'm eager to get started with the market farm again this coming season!

Well, the first time didn't go through, so here goes again:

This is my first time posting, so we'll see if this goes through OK.

1.  For those of you who sell eggs, especially in Iowa after the big egg hubbub last summer, do you carry special insurance to cover you in case someone says he/she ate some eggs bought from you, then got sick?  Liability nightmare?

2.  Do you use new egg cartons that are unmarked or marked with your farm name, or do you use second-hand cartons or some other container that the customer brings?

I've been thinking of selling some eggs and possibly increasing my flock, but this egg scare last summer has me rethinking the idea quite closely.  I don't want to bring the whole family finances down just for some chickies.  Just wondering what other people do and how they're managing.

By the way, I've been reading the Market-Farm list for quite some time and really appreciate the time and effort you folks put in trying to help others on the list.  Just thought I'd let you know.
