I can't say that I am aware of the breeding project, but Elizabeth Dyck,
formerly of NOFA-NY, may have been involved. I'll see if I can find her
email address, if you are interested. They probably used emmer and spelt.
Some growers in my area have grown them successfully, for example, Klaas
Martens and Thor Oeschner, in the Finger Lakes region. Both crops need to be
dehulled before using in/as food. Klaas and Lakeview Organic Grain have a
dehuller.

A couple of years ago someone contacted me about a seriously heirloom
wheat growing project in New England. I've forgotten the details. I
think this was a breeding project based on very ancient European
wheat. Small farms and farmers were involved in this project.

Does this ring a bell with anyone?
