My salad mix is 2 50' x 4' beds. One bed gets a mix of colorful lettuces, 3 rows per bed, fairly thickly seeded with an Earthway seeder. The other bed has 3 rows, one row arugula, one row mizuna and 1/2 and 1/2 red mustard and tat soi. I also will add other baby greens like spinach and kale when such beds need thinning. Another thing i do is plant the lettuce about a week before the other greens as the lettuce needs an additional week to grow.

I sell spring mix in 6 oz bags. I sell arugula in 4oz bags, mustard, tat soi, mizuna (when they get too big for spring mix purposes) and baby lettuce in 1/2 pound bags -all for $4

My salad mix is a lot of lettuce, then just mixing the other things in with
it. It depends on what I have available.
I also sell my mizuna and tatsoi separately. Usually mixing it all together
sells the best.
