We do a similar mix and customize for some customers but our farm mix consists of 2/3 lettuce, 1/3 greens by weight.  Keep in mind that our lettuce mix (without greens) is already quite a variety (we plant over 20 varieties so that each lettuce or salad mix contains more than a dozen varieties).  Our customers love this and although it's a lot more work than 3 lettuces and 3 greens, it keeps them coming back!

I have two questions: 1.  What do vole runs or tunnels look like?

2. How do you create a salad mix? I've got the lettuce and Asian greens growing, and it looks like everything will be ready for market opening in 2 weeks. But, this is my first time to try salad mix and I don't know what amount of each thing to put in. I'm thinking of doing about a 5 ounce bag of mix to sell. I'm growing everything separately so I can cut and mix as things become available, but I am clueless as to how much lettuce vs. tatsoi, or mizuna to add. Any help would be appreciated!
