The seed size inside the pod should tell you if they are immature, overmature
or just right. If they are immature, they will just be tiny seed coats with
hardly anything filled in. If they are overmature, they will be large and
starting to harden. The pod will get rounded sides at each seed too. If they
are just right, the seeds will be filling, but not full. And the pods will
still be relatively straight-sided. Consumers have different tastes so your
market may be different than one in another community.
