We have raised beds now too. I was figuring on mulching the
paths with grass clippings and mulch hay. We've also made
our paths wide enough to mow with our lawnmower, in case we
need to mow the paths.

But right now we're in the middle of having all the
carpeting taken out of our house and replaced with sheet
vinyl (we have dogs and a cat, and I can't keep the
carpeting clean).

I think I'll use the carpeting to cover the paths. We just
need to cut it in strips. It will probably look funny, but
so what? It will certainly keep the weeds down for quite a
while, and it will be better than walking in mud. And it
would help with a disposal problem (i.e., otherwise we'll
have to pay to take it to the town landfill).
