Don't know much about lemon balm, except that it's nice to have in the garden. Fennel seeds are another matter. Great in biscuits - particularly shortbread. Good in bread too. Also a good breath cleanser. Try nibbling them green and tender. Magnificent for the digestion, taste brilliant and totally addictive. Put a small bowl of freshly picked green fennel seeds on the table when you have friends around for dinner. After dinner they won't last too long - the seeds that is, not the friends!

farm in balance and to bring in good bugs, etc.  But I'd like to use
them!

Any ideas on what I should be doing with these two - how I should be
selling them???
