Any other way to package lemon balm other than dried?

You can sell fresh bunches of it as shower or bath herbs -- folks just dump the bunch in the tub or tie it in a bag so that the shower water runs through it. Supposed to smell great and be relaxing and comforting.

Who uses fennel seed (for cooking) and why?

Used a lot in Indian cooking -- it's part of many spice mixes You eat them raw, toasted or candied (like Jordan Almonds) to freshen breath --tastes something like licorice. With all the hot sauces you offer, I'm surprised you don't have a plate of it out at your stand to cleanse the palate of anyone who's tasting -- might convince the timid to try more! ;-) I keep some in a nice jar on the dining room table so that folks can cleanse their palate after eating -- especially since I use so much garlic.

Tea made from fennel seeds is also good to prevent gas, help digestion and clear up colds.
