A good way to tell if corn is ripe or not is to feel the ear. You can tell
a filled out ear from an unripe one--especially in comparison to the rest of
the load. Also look at the color of the silks.
A bigger indicator of quality is variety. You should be able to tell this
from a sample ear and by asking the farmer.
Temperature and time since harvest is another indicator of quality. Usually
you can look at the condition of the shucks--how dry they are--how long has
the vendor been sitting in the sun etc.
Variety and post-harvest handling have more to do with taste than a finger
nail corn stripping can prove.
I will repeat ---One old lady can ruin a truck load of sweet corn!!!!! Many
buyers don't want something just good enough---they want the best 6 ears in
the whole darn truck load and THAT is a FACT.
They will not get the chance behind my truck. Like most farmers, my money
comes from repeat costumers. I will do everything in my power to give them
an ear of corn that makes them come rushing back to my pickup. I will do
everything in my power to make a corn stripper run blushing away from my
pickup truck.
