I just attended a wonderful workshop on this. Essentially this is the
bare-bones of how it works organically/sustainably, at least how it was
presented to us.

Initially you prepare raised beds and plant them to cover crops - rye I
believe was the most widely used. This is then mowed at the proper time with
a
flail mower or scythe. It is left to lie on top of the raised bed and
presents
a very think covering. Then a narrow opening is cut (different
implements/tools) for seeds or transplants.

The mowed cover crop suppresses weeds and each year it gets better. I saw
slides of many different crops growing this way in Virginia right now - they
were awesome. The beds are never walked on - the cover crop turns to fabulous
mulch thanks to the earthworm activity and weed suppression was excellent.
