Title: Re: [Livingontheland] canning sauces Look for the latest version of “Putting Food By” - it has excellent guidelines for all types of canning. Do not – I repeat DO NOT trust information on canning that you find on the web unless you really really trust the source. I’ve come across too many “recipes” that are half-assed and could really harm someone if they didn’t know better. Buy a book – it will save a lot of problems/illnesses.

Maybe Paul is right, I need to name a charity, oh, should have something to leave first. I hadn't thought about the need to pressure onions and peppers.

The republic of the united States never died, it simply went dormant
when the southern states walked out of congress leaving a lack of
a majority to set a date to reconvene.
There has not been a lawful uS congress since.
Lincoln was assassinated while trying to reconvene congress allowing
the de-facto corpocracy to gradually and insidiously take control.
The republic has been re-established, is being re-inhabited
and needs your support.

Yes, you can pressure can it using the same processing time as for raw meat. I've done this many times. I pressure can meatless sauce as well, because I always put onions and green peppers in it. I like to have both on hand.
