Freezing kills some bugs. I freeze mine and then dry can. I haven't lost any flour or seeds (corn, barley, etc.) to bugs using this method and I found one jar in the back of behind that was at least 5 years old. The jars you are talking about will generally sufficient reseal themselves using the dry canning method. I have the one-gallon jars.

I put my grain in half-gallon mason jars and put it in the freezer for a few
days. I've been told that freezing also kills any bugs/eggs. Does anyone
know if that's true? I've never seen any bugs in my stored grain.
