Any time I've had something I thought might be tough, I've braised it. i've had some surprisingly good results. It's too late for you now, I guess, but Diana Kennedy has some good goat recipes.

(indirect heat). I'll mop it and set a pan of water in the cooker to
try to keep everything wet.
I know some of you cook goat. Any tips on cooking goat so it is not tough?
