In the early days MAC was the preferred target but as their system improved
and Maxisquash started making too rapid changes and cut back on testing,
the focus shifted to windoze. The Mac OS is somewhat based on the Berkeley
Software Distribution, a variant of unix from when you could get a cheap
copy if you were an educational institution. BSD was different enough from
Bell Labs unix (Unix Is Not multiX) that they could distribute it without a
Bell Labs license. Jobs used BSD in his Next system which was folded into
Mac OSX. The other major used of BSD was Sun Misrosystems which has now
shifted to a varient of Linux.
Now most Viri, worms, etc are written by script kiddies. They are just
doing some minor modification to an existing program then parading around
like they did something. There are still new programs being written but
truly original work is rare.
Another thing that has happened is that companies are hiring people to look
for problems so they can be found and fixed before they are exploited.
