It seems we've come full circle, from the yucks to the yummies. Got me to
wondering about gelatin's 'useful' properties. I was thinking more along the
lines of preservative potential, bot found none. However,

info.
I had forgotten about marshmallows and gummi bears, and had no idea it was
used
in the processing/preparation of peanuts?

"Gelatin in Meats – Gelatin is used to gel aspics, head cheese, souse, chicken
rolls, glazed and canned hams, and jellied meat products of all kinds. The
gelatin functions to absorb meat juices and to give form and structure to
products that would otherwise fall apart. Normal usage level ranges from 1 to
5%
depending upon the type of meat, amount of broth, gelatin Bloom, and texture
desired in the final product." (I've no idea what 'souse' is...don't want to
insert any comic relief here).

Also, I've seen (or remember) seeing gelatin capsules advertised over the
years...supposed to strengthen hair and nails...any credibility to that? And
I'd
no idea dried gelatin is 92% digestible protein. Apparently, dessert can be
good
for you!
