There are days I barely see the
garden because I'm on the phone to cutomers, haulers, butchers, farmers'
market vendors, or sitting at market, etc. I'm coming to the conclusion
that farming, at least the way I'm doing it, isn't a one person job.

That is why the gods created specialists. We homesteaders pride ourselves on being able to do almost anything and everything. I am better off when I recognize my weaknesses and hire someone else to do those things. In my case that would include mechanical stuff.

Marketing people are highly valuable. You need at least a helper and perhaps a partner, who would be better motivated. Open yourself to having one of your customers become involved in the biz.
