If $1.25 makes it uneconomical then it's time to get out of the egg business.
Somehow you need to find a way to provide a value-added product that people
do want and are will to pay a premium. A friend of mine is making BBQ sauces
among other things and seems to be thriving.

With the avian flu threat and price of eggs and all, I'm thinking that
chickens aren't worth it anymore.

It would be nice to add some 'value-added' products, and would use up any
leftover produce. But I'd need an inspected kitchen. Mine would never
pass; I'd have to practically rebuild my house to make it legal, and you
can't have any animals in the house, ever...that would let me out. I've
often thought of adding a commercial kitchen, but the expense would be far
more than I could ever make from it..
