To me, bletting means beyond ripe. A "ripe" medlar is hard and astringent, but white inside like an apple. When it has bletted, the flesh becomes soft, turns brown, and the fruit looks very much like it has spoiled, but it's actually edible. Cornus mas fruit that is "after ripened" still looks like a fresh fruit. The acids and astringency decrease, but the flesh doesn't turn brown or look decomposed. About the difference between a Bing cherry that has turned red and one that has hung until it turns deep, dark red. Full of flavor and really ripe, but it's at it's peak and can't be left any longer or it WILL rot.
