Hello,
Can you shade it in it's new location for a few days after transplant?
Possibly potting it up in a very large pot (bottom of a 55 gallon, plastic drum) and leaving it in the shade (or garage) a few days would help.
I would trim back the foliage by 1/3rd and get as big a root mass as you can.
Prepare the pot with; drain holes, screening over drain holes, 3" of sand/pea stone.
Then I wouuld baby it till fall, and plant it out, once dormant.
If you do use a 55 gallon drum to create a large pot, do yourself a favor and cut some hand-holds into it, up by the rim of your pot.

Just wondering if the shock of digging the sick tree up would be worse than leaving where it's at? I tried moving a tree once in summer and it wilted and died pretty quick.
I'm battling the potentially the same waterlogging condition with an apple and a couple of small pears. So far I've found providing shade has given the tree some measure of relief.

I have not had much luck with Stark trees. Goldcot is normally pretty hardy. The rootstock needs to be able to take the water. Next time specify Marianna2624 rootstock or Citation rootstock. Both can handle drought or swamp temporary conditions. Your best bet now would be to dig and pot the tree to dry it and examine the roots. When you replant it choose a different location, or put it on a hill for drainage. You may also have picked up borers or had the roots eaten by voles.
