I think with gooseberries you need the right degree of ripeness for the
variety and use. Obviously, greener for preserves. With a new plant I
would try a few berries every few days to a week and keep notes to see how
long after blossom/fruitset you find them most appealing.

Hello,

Aren't gooseberries picked a little green for tartness? I have had fully
ripe gooseberries and they were very bland.

Possibly there is an expert out there.
