An excellent observation, Helene. I grew up in Kansas (USDA Zone 5), where
Jonathan, Grimes Golden, Golden Delicious and Stayman Winesap were tops in
flavor. However, none of these is winter hardy in Minnesota, where I now
live. Of the apples grown up here (a much cooler and wetter climate), I'd
rate Chestnut Crab, Honeygold, Regent, Haralson, McIntosh and Honeycrisp as
the best. That's not to say I'd recommend these cultivars for everyone,
however, because some of them do not do perform well in warmer climes. For
example, in Kansas, Honeygold and McIntosh tend to drop their fruit before it
can mature. -- Sam Brungardt, St. Paul, Minn. (USDA Zone 4b)

Varieties are often zone specific. Thus an apple tasting bland in a warm
climates can be described as exquisite in a colder climate. The same is true
for soils. Some apple varieties do fine in clay and some are definitely
better in sandy soil. So the appreciation of apple varieties is not only a
matter of taste. The quality differ depending on where the apple is grown.
Hélène, zone3-4, where the weather is fine but consistently below 32 F.
